There was this little place in Gainesville, FL where we used to live called Buddha Belly. They had all kinds of fun curries and stir-fried rice (think pizza fried rice with mushroom, sausage, pepperoni, and marinara or salmon fried rice with capers and red onion). This is my version of one of theirs I loved, Cheeseburger Fried Rice. It can accommodate lots of diets or dietary restrictions and can be made GF with a simple swap of soy sauce to tamari.
Ingredients:
4-8 strips of bacon, diced
1 lb ground beef
1 medium onion, diced
4-6 cloves of garlic, minced or put through a garlic press
2-3 cups of cooked rice (long-grain, cauliflower or half and half)
1 cup stir-fry vegetables (peas carrots broccoli)
1 ½ cup shredded cheddar cheese
Soy sauce or Tamari
Siracha
For Garnish:
Green Onions
Sesame oil
Optional: ketchup, mustard, cayenne pepper
Start by frying bacon in a large Dutch oven or wok. Remove bacon and set aside, add ground beef, garlic and onion to bacon grease. Cook until no longer pink. Add rice, soy sauce, siracha. Add stir-fried veggies (and cauliflower rice if using – defrost and remove excess water if using frozen). Heat through and season as desired. Add half of the cheese to the pan and stir in until melty. Serve with additional cheese, scallions, bacon, sriracha, ketchup, mustard, and cayenne pepper.
